has been prepared using the flour of spelt, emmer wheat and einkorn, which were used to produce baked goods in the past.

These are ancient varieties of wheat, grown centuries ago, which are characterized by their particular flavour and nutritional properties. They have a lower gluten content (in comparison with modern wheat varieties), and at the same time are better metabolised by the organism (in comparison with the gluten contained in modern varieties of wheat).          

Bread with ancient grains have a high content of well-metabolised protein, and are also a source of vitamins and minerals such as vitamins B1 and E, phosphorus, magnesium and copper.

Additionally, the flavour of the baked goods has been enriched due to the high content of various seeds, such as sunflower, linseed, soya and sesame.
